Gluten Free Banana Bread
Gluten Free + Dairy Free Banana Bread
Adapted from Healthy Crosby
Dry Ingredients:
¾ cup blanched almond flour
1 ¼ cup sorghum flour
¼ cup arrowroot flour/starch
1 tsp baking powder
½ tsp fine sea salt
¾ cup sucanat (unrefined cane sugar) or sugar of choice
1 ½ tbsp ground psyllium husk
½ tsp ground cinnamon (optional)
¼-½ cup equal parts chopped walnuts and pecans
Wet Ingredients:
½ cup hot water
1 tbs lemon juice (fresh)
1 ½ cup brown bananas (approx 3 medium bananas mashed)
3 tbs coconut oil
1 tsp vanilla extract
Method:
Line loaf pan with coconut oil (or any neutral oil) and set aside.
Preheat oven to 350°F (176°).
Measure all dry ingredients into a large mixing bowl. When measuring the almond and sorghum flours, do not pack. Use a fork to mix and fluff all dry ingredients making sure it’s aerated and there are no lumps.
Place all wet ingredients into a blender. If you don’t have a blender, mix everything into a separate mixing bowl and mash with a fork until evenly combined.
Check the oven is preheated before mixing wet and dry ingredients.
Fold dry ingredients into wet ingredients.
Transfer batter into greased loaf pan and bake for approximately 30-35 mins.
Remove bread from oven and cool completely in the pan. It’s important to wait until the loaf has set and is 100% cooled before slicing the loaf or the insides of the bread can tear. Use a serrated knife to slice. If the middle of the loaf sinks, it may be undercooked. You might put it back into the oven for an additional 10 mins.
